Tasting Notes
Lime, Kiwi, Mango
Experience a vibrant and fruit-forward Guatemalan coffee with tasting notes of lime, kiwi, and mango. This special anaerobic natural lot was processed at our cherry mill in Ayarza, Santa Rosa, where we work directly with smallholder farmers to bring out the best of the region’s unique terroir.
Unlike the traditional model in Guatemala—where farmers process coffee individually, often leading to inconsistency—we centralise processing at Ayarza to maintain strict quality standards from cherry selection through to drying. Farmers receive a premium for delivering only the ripest cherries, ensuring exceptional flavour and consistency in every batch.
One of the dedicated producers behind this lot is Arnaldo López, a lifelong coffee farmer who tends 12.6 hectares of land. Coffee has been in his family for generations—his father first took him to plant trees as a child, and today Arnaldo supports his wife Alicia and their five children through coffee, livestock trading, and a small family store. Despite challenges such as disease and fluctuating yields, Arnaldo continues to adapt, introducing more resilient varieties, such as Anacafe 14, while keeping quality at the heart of his work.
This Guatemalan specialty coffee is a celebration of resilience, innovation, and tradition. With its bright tropical fruit profile and silky body, it’s a cup that showcases both the skill of the farmer and the precision of the Ayarza mill.
