In the native Tsetsal language of the Mayan people of Tenejapa, Cajpe Lak means “Coffee Flower.” The name speaks to the deep connection between coffee, land, and heritage in this mountainous region of Chiapas.
Tenejapa is tucked into the misty mountains of central Chiapas, where the forest canopy and drifting clouds shelter the coffee trees, and time moves at the pace of nature. Farms sit between 1,300 and 1,700 meters above sea level, their volcanic soils, abundant shade, and cool, humid climate creating the perfect conditions for slow cherry development. This slower maturation draws out greater complexity in the cup, a reflection of both the environment and the patient care of the Tsetsal families who have cultivated these lands for generations.
We roast Cajpe Lak with precision to showcase its delicate sweetness and natural elegance. A medium roast preserves the floral aromatics—soft notes reminiscent of jasmine—while unveiling gentle fruit brightness, a honeyed smoothness, and a silky body that lingers long after the last sip.
